Pork shouldn’t be considered “the other white meat”. The National Pork Board (@porkandpartners) would like you to think pork should be lean and pale, but pork on pasture with the freedom to move around, forage for food, and run with the herd has dark red meat with lots of intermuscular fat (aka marbling). Pair this with the fat quality from Mangalitsa breed pigs and you have one amazing pork chop!
