Quiche Lorraine

Serves 4 as a main or 8 as a side

Nick's mom's recipe

This is a family tradition for holidays. Nick claims he could eat the whole thing himself, but the richness of this breakfast dish has saved us from such an outcome…. so far. We typically serve this as a side to a leisurely family breakfast.  

Ingredients

1 unbaked pie shell (we love to use lard in shells and crusts)
1/2 lb bacon, cooked and crumbled/chopped (bacon ends are great for this) 
1/2 lb grated Gruyere cheese, or whatever you have in the cheese drawer and want to eat
4 eggs
1 1/2 cups half and half
1/2 teaspoon salt
1/8 teaspoon nutmeg
dash of black pepper

Preparation

  1. Heat oven to 375 F
  2. Put pie shell in quiche pan
  3. Spread bacon over bottom of quiche pan
  4. Spread cheese over bacon
  5. Beat egg and mix with remaining ingredients
  6. Pour over bacon and cheese
  7. Bake 30-40 minutes on low oven rack until puffy and golden
  8. Rest 10 minutes

Tips

You can substitute the bacon with sausage or any other meat or veggies.

Sauteed spinach, kale, or Swiss chard are nice green additions.
